Ayurvedic Cuisine known as the oldest method of scientific cooking, is the basis for not only Indian Cooking but has influenced the rest of the world too.

You are what you eat. For centuries, this has been the basis of most cuisines around the world. But, Ayurveda, the 5000-year-old ancient Indian science, first introduced the art of personalized cooking. It demonstrates both, what should you eat and how must one prepare it.

A unique combination of Vata (Ether), Pitta (Fire) and Kapha (Water) constitutes the human body and balances its life forces. Ayurvedic cuisine encompasses dishes made with recipes that optimize the elements in the human body. This philosophy of cooking is still followed by those practicing Ayurveda, since it is a healing and a restorative cuisine.

Ayurvedacharya Naina Marballi has been advocating Ayurvedic cuisine ever since she has learnt the ancient science of Ayurveda. That is, 40 years of experience and practice. She is here to share this ancient science and her wealth of knowledge with you.

This is an exquisite opportunity to learn with Dr. Marballi, in which you will have the privilege of going on a journey to the Birthplace of Ayurveda – Kerala, India; also known as “God’s Own Country”. This will be a 15-day study/leisure trip organized by Ayurvedas World inclusive of air travel, accommodation, lunch meals, and Ayurveda cuisine classes.

Ayurveda in Kerala

Students will be trained in Ayurvedic culinary skills. The program comprises of 65 hours of hands-on cumulative learning which includes theory, technique and practical application. The course will begin with 2 introductory sessions equaling 15 hours in New York. Thereafter, 45 hours of the program will be covered amidst the lush green habitat of Kerala, India from October 29th – November 12th, 2017.

Upon Completion of the Program:

  • Basics of Ayurveda as prescribed in the ancient Ayurvedic transcripts
  • The meaning of one’s constitution and the importance of preparing meals in accordance with the same
  • To detect an imbalance in the constitution and how to combat it with Ayurvedic home-remedies
  • To address some common issues like indigestion, eating disorder, fatigued adrenals, constipation, low energy, depression, and other ailments.
  • Preservation and uses of herbs in cooking
  • Making Ghee and Herb-infused oils for the purpose of healing
  • Practice Maun Vrat (a vow to keep silent) thereby enhancing one’s spiritual growth
  • Ayurvedic cuisine and its important pillars, and the meaning of Rasa – Six tastes
  • The Dosha-balancing properties in food and spices based on taste, potency, pre and post-digestive effect, & unique healing properties
  • To become a skilled chef and be able to prepare various Ayurvedic Recipes for oneself and for others
  • Spiritual insight through Ayurvedic cooking

Unit 1: What is Ayurveda?

  • Introduction to Ayurveda
  • Understanding of the three doshas – vata, pitta, kapha
  • The correlation between Ayurveda and Spirituality
  • Four pillars of nutrition

Unit 2: Ayurvedic Nutrition

  • 6 tastes (rasas) and its 20 qualities
  • Theory of “seven tissue” types and its relation to nourishment, elimination & digestion, etc.
  • The relationship between digestion, emotions and metabolism
  • Designing diet guidelines based on constitution type
  • Food combinations and incompatibilities
  • How western nutritional research and Ayurvedic nutrition complement each other
  • Identify carbohydrates (simple sugar, complex carbs and fiber), proteins (vegetarian and animal sources), and fats (monounsaturated, polyunsaturated, saturated and trans fat)
  • Optimal cooking strategies to preserve nutritional potency
  • Chef skills: Use of knives and various cutting/chopping techniques, uses of different cooking vessels/pots, measurement techniques
  • Cooking skills – use of various herbs and creating your own recipes

Unit 3: Wellness and Ayurveda

  • Health and vegetarianism
  • Learn how to control portion sizes, how to quantify carbohydrate count in each portion for controlling blood glucose levels, and how to read food labels
  • Lifestyle and diet as preventive medicine
  • How to carefully select the ingredients
  • Hygiene, sanitation and food preservation
  • The use of herbs, beverages, spices and condiments to enhance wellness
  • Healthy desserts with the use of ghee, oil, yogurt, and honey
  • Detox and rejuvenation through specific diets

Tuition

Tuition Fee: $3,280.00

DAY 01: 02/09/17 COCHIN

On arrival you are met and transported to hotel. Cochin is in a stunning location between the Arabian Sea and the backwaters. The city of Kochi perfectly reflects the eclecticism of Kerala. This is a perfect day to recoup from jet lag, and rest your mind for the for the next day’s session. Overnight stay.

DAY 02: 02/10/17 COCHIN – MUNNAR

After breakfast, checkout and attend the orientation talk about Kerala. Later proceed for a half day sightseeing tour of Kochi covering the historic part of Kochi. Here you get to see the Jewish Synagogue, The Dutch Palace, St. Francis Church, Chinese fishing nets and the Jew street. After lunch (own expense, today’s lunch is not part of the package) we will proceed to Munnar. Surrounded by the Anamalai hills, this hill station offers spectacular views of the craggy peaks, manicured tea estates, picturesque towns and winding lanes. By evening we will arrive to Munnar and check in at resort. Overnight stay.

DAY 03: 02/11/17 MUNNAR

Enjoy a morning yoga class followed by breakfast. Proceed to the venue where Ayurvedic Cuisine Workshop will be held followed by lunch. Post lunch we will visit the Tea Estates and Tea Museum. Return and enjoy the massages and activities offered by the resort. Overnight stay.

Activity: Yoga, Ayurveda Day – Lecture followed by lunch, followed by sightseeing of Tea Estate.

DAY 04: 02/12/17 MUNNAR

Morning yoga, after breakfast proceed to the venue where Ayurvedic Cuisine Workshop will be held followed by lunch. Post lunch proceed Shrishti initiative by TATA. Shrishti is a welfare society for the differently abled; here you get to see natural color dyeing unit, handmade paper unit, confectionery unit in order to learn about Developmental activities in rehabilitative education and Tata Tea wives welfare association around Munnar.  Return and enjoy the massages and activities offered by the resort.  Overnight stay.

Activity: Yoga, Ayurveda Day – Lecture followed by lunch with half day guided tour of Munnar.

DAY 05: 02/13/17 MUNNAR – PERIYAR

After breakfast, depart for Periyar. Arrive Periyar & check in the hotel. Post lunch proceed to the Spice plantations visit followed Kalari Payattu. We will also experience a traditional martial arts show at the local art centre. Overnight stay.

 DAY 06: 02/14/17 PERIYAR

Morning Yoga. After breakfast move to the venue where Ayurvedic Cuisine Workshop will be held followed by lunch. Post lunch proceed for boating at the lake. Return and enjoy the massages and activities offered by the resort and a lecture on Yoga. Evening proceed for Kathakali Overnight stay.

 DAY 07: 02/15/17 PERIYAR – KUMARAKOM

After breakfast, depart for Kumarakom.  En route visit a Tea Factory at Vandi periyar. Arrive and check in the Resort. It is a beautiful village situated on the banks of serene palm-fringed backwaters on the west and the Western Ghats on the east. Evening go for a sunset cruise. Return and relax after a talk on Ayurveda. Overnight stay.

DAY 09:02/17/17 KUMARAKOM

DAY 10:02/18/17 KUMARAKOM – ALAPPUZHA

After a leisurely breakfast checkout and proceed to Alappuzha to check into the houseboat. The houseboat package consists of mixed bag of experiences. You check in by noon and you are taken on a 5 hour cruise through the wonderful labyrinth of canals along the Vembanad lake criss crossing through the villages which gives you an idea of the life by the backwaters. You get to see houses, churches, temples, paddy cultivation, fishing, etc… witnessing these are rare. In between you are served lunch and snacks. In the evening the boat is anchored as that is the time when the fishermen lay their nets so there will be no way you can move about. Next morning you wake up to the chirping of birds and the sound of nature. You are taken on a cruise by 0730 hrs and served breakfast before being dropped off at 0900 hrs for the onward journey.

DAY 11: 02/19/17 ALAPPUZHA -KOVALAM

After breakfast, checkout and de board. Proceed to Kovalam. Sparkling blue waters, silvery white sands, swaying coconut palms- Kovalam is a dream. Stroll through the Beach and enjoy the facilities of the resort. Evening enjoy Ayurveda and Immunity. Overnight stay.
